Sarah's Slaw

Colorful, nutrient-dense and delicious slaw salad

Key Ingredients: Beets, cabbage, carrots, apple

6 servings


Ingredients

Slaw Dressing:

·         6 Tbsp Extra-Virgin Olive Oil

·         4 ½ Tbsp Real Maple Syrup

·         4 ½ Tbsp Apple Cider Vinegar

·         ¾ tsp Celtic salt or sea salt

·         ¾ tsp onion powder

·         ¾ tsp Dijon mustard

·         1 ½ tsp poppy seeds

Slaw Salad:

·         3 cups shredded cabbage

·         2 medium carrots, tops cut

·         2 small green apples, cored

·         3 medium beets, ends and rough spots trimmed

·         1/3 cup walnuts, chopped

·         3 Tbsp parsley, chopped

·         5 green onions, white/light green parts chopped

Instructions

1.      Dressing: Combine all dressing ingredients in a jar with lid, shake well to combine and set aside for later.

2.      Shred cabbage, carrots, apples and beets in food processor (or use your muscles with a box grater!) and add them to a large mixing bowl. (I shred the beets last because they stain everything- they have such powerful phytonutrients! I also rinse my food processor immediately.)

3.      Add the remainder of the slaw ingredients, pour the dressing over the slaw and toss well. Serve soon after and ENJOY!
