Crisp Fennel, Leek, and Apple Slaw with Walnuts

This refreshing slaw combines vibrant flavors and textures, making it a versatile side dish that pairs well with any meal.

  • 1 medium leek

  • 1 medium fennel bulb

  • 1 crisp apple (e.g., Honeycrisp or Granny Smith)

  • ½ cup toasted walnut pieces

  • 1-2 tbsp dried cranberries or dried tart cherries (optional and no added sugar preferred)

Instructions

  1. Prepare the Leek:

  • Rinse thoroughly to remove any dirt, slice lengthwise and then cut into thin half-moons.

  • Place in a large salad bowl.

  1. Prepare the Fennel:

  • Trim the fennel bulb by cutting off the hard bottom and fronds. Set the fronds aside for garnish.

  • Halve the bulb and slice into thin strips about ¼ cm wide. Add to the salad bowl.

  1. Prepare the Apple:

  • Core and julienne the apple into thin strips using a mandolin or a knife.

  • Add to the salad bowl along with the sliced fennel and leek.

  1. Add Crunch and Sweetness:

  • Chop the toasted walnuts and sprinkle them over the salad.

  • If using, add the dried cranberries or tart cherries.

  1. Toss and Garnish:

  • Gently toss the salad to combine all ingredients.

  • Finely slice some of the fennel fronds and sprinkle over the top as a garnish.

  1. Dress and Serve:

  • Drizzle with the salad dressing below—something zesty or creamy works well.

  • Serve immediately for the best crunch and freshness!

  • 3 tbsp raw honey

  • 1 cup oil (avocado or extra virgin olive oil)

  • 1 tbsp poppy seeds

  • Pinch of sea salt

  • Freshly ground black pepper (optional, to taste)

  • In a blender or food processor, combine lemon zest and juice with vinegar, honey, mustard, and garlic.

  • Blend until smooth.
